Hello, I’m Lori Miller. Welcome & Thank You for being here!
A LITTLE BACKGROUND: I first developed a passion for cooking as a little girl while watching my Mexican grandmother, Guadalupe (my Nana Lupe), prepare daily meals for our large family. Once I was a little older, she taught me the fundamentals of simple Mexican recipes, along with insights into the delightful flavor combinations, made with fresh and cost-effective ingredients. My Nana Lupe grew up so poor, she could barely read or write, but she could cook like the best of them! She was my true, culinary inspiration.
FAST FORWARD: In high school, I had the incredible opportunity to be a foreign exchange student to Japan. During college, I went back to Japan for a summer of travel. After college, I got offered the once in a lifetime opportunity to relocate and work in Japan for a few years. Traveling through a foreign country and living there are very different, but what a fabulous experience it was! It wasn't until I was living and working there, that I realized how much I enjoyed cooking. Finding American food products in Osaka was difficult (and costly), so I began preparing everything from scratch. My apartment became filled with fresh bread, spaghetti drying on clothes hangers, and sauce jars on bookcases. My neighbors enjoyed my new hobby! Also, learning a range of Japanese dishes from my neighbors was priceless. This was an amazing experience! Their dishes were some of the greatest I've ever tasted. A bittersweet side note: My Nana Lupe passed away the year before I left the USA, so I wasn’t able to share my life experiences with her, but our shared memories were always inspiring me, as they still do.
THEN WHAT HAPPENED? After returning to the United States in the 1990s, I enrolled in culinary school to fulfill my goal. First, I took the 9-month Professional Baking and Pastry Course at The Epicurean School of Culinary Arts in West Hollywood, followed by the 16-month Professional Chef Training Program at the Los Angeles Culinary Institute in Encino, California. After that, I spent the next two decades working as a private chef for celebrities and high-profile individuals throughout Southern California, while also gaining valuable experience as a film industry caterer, recipe developer, menu consultant, farmers market vendor, and culinary instructor.
IN ADDITION to being a trained chef, baker, and Podcaster, I dabbled as an ebook author. Can you believe it? My first eBook, Pure Fresh Donuts: 30+ Mix & Match Paleo Recipes, was listed on Amazon’s Top 25 Best Selling Gluten-free eBooks. My second published eBook, Gluten-free Delicious: 30 Quick & Nourishing Recipes, has done very well, also. Both books are available on Amazon.com.
OUTSIDE OF THE KITCHEN, I’ve been known to binge on international cooking shows, Korean dramas, be a perpetual seeker of new foods, and a watcher of mystery, suspense, and espionage movies. I love traveling, hiking, gardening, creating concrete plant containers and discovering new music. I’m super blessed to be married to a wonderful husband who has a strong background in cooking, too! He’s an active man who can hike for miles, he plays tennis, he lives for travel and adventure, but most importantly to me, he is a peaceful man. He’s never shy to take on the challenge of whipping up something gluten-free for us to enjoy. We are adventurous explorers who are based in California, and we are so blessed to share a strong faith in God.
WHY? WHAT’S MY PURPOSE? More than ever, I feel that what we eat has a significant impact on our health. Why do I believe this? My father has always been a junk-food addict (sugar, soda, fast food), shunning healthy options at all costs, and as a result of his eating habits, he is unhappily living in poor health. Mama, on the other hand, hates fast food and prefers to consume only fresh ingredients; she is, to be honest, a spring chicken in comparison to Dad -and she is older than he is. Their opposing practices have been eye-opening for myself (and others who know them), however, these experiences have encouraged me to devote my attention to providing nutritional examples of allergen-friendly meals. Developing innovative gluten-free dishes, all while avoiding high glycemic foods, refined seed oils, refined vegetable oils, and GMO soy products is important to me. My goal is quality over convenience, which means I want to make sure that we all eat well, free of fast food and processed foods with affordable ingredients. Because I deal with inflammation, I have avoided white sugar for the past fifteen years. I also try my best to avoid all artificial ingredients and eat mostly organic, low-carb meals. I truly believe that there are endless options for healthy and nutritious gluten-free recipes.
NOW WHAT? Now in my 50’s, I'm at the stage of my life where I get to care for my elderly parents. My mother and father are both in their eighties. My parents live in two different cities, so I travel across California to ensure they’re cared for, that they’re safe, and that they have all they need to enjoy peaceful days. Due to my family responsibilities at this time, I’m not cooking for private clients and will utilize this blessed opportunity to work full-time, here within Substack, focusing on Pure Fresh Daily and The Considerate Kitchen (launching Winter 2025).
