Bread That's Perfect for Anemia
I created this gluten-free loaf back when I taught a cooking series for people with Anemia. It is easily digestible, provides iron, protein, soluble & insoluble fiber, and lots of lovely flavor.
Ten years ago, I was asked to teach a cooking course for individuals who live with Anemia. Since I was already cooking for my little Mama, who’s lived with horrific, crippling Anemia for years, I jumped towards this opportunity to create nourishing and wholesome, gluten-free options for these people in need. Were they celiac? No.
Why gluten-free? Because many people with Anemia develop constipation and avoid gluten products by choice. Why? Because wheat can impair the body’s ability to absorb the nutrients required to survive. What is Anemia?
