Cassava Wraps
Made with only five ingredients, gluten-free and dairy-free, you're going to love these soft, flexible wraps for all your scooping and sopping up needs!

Makes: 8 wraps
Ingredients
235g (1 cup) milk (I used whole fat, canned coconut milk)
2 eggs, whole
1 tablespoon oil (I used melted coconut oil)
60g (½ cup) flour (I used cassava flour)
¼ teaspoon sea salt (optional)
Instructions
You’ll need a few teaspoons of oil for cooking the wrappers. I used coconut oil.
Combine ingredients in a blender. Blend for 30 seconds to achieve a smooth and silky batter.
Warm skillet over medium heat. Drizzle oil into and rotate the skillet, making sure the surface is evenly coated. Lower heat to medium-low.
Using a ¼ measuring cup, fill up the cup and pour the batter into the oiled skillet. Immediately rotate the skillet, making sure it is evenly coated with the batter. Cook wrap for about 1-2 minutes, or until you don’t see any raw batter, then flip over to the other side for a minute more. Repeat the steps until all batter is used.
Allow the wraps to cool down before filling and rolling.
