Every time I make Chorizo Carbonara, one of our favorite dishes, I wonder if the Italians would consider it sacrilegious because, not only have I, but others around the world, have condensed their gorgeous, perfectly rich creation of Pasta Carbonara into a quick meal - and it's made with chorizo! It's just so good! I am convinced they would let us all off with a pass.
For this dish, I always make my own chorizo, using my Nana Lupe’s recipe, and I make it with ground lamb. I love the depth of flavor and the fattiness the lamb adds, not requiring me to add any additional olive oil like I would have to if I used grass fed beef (its leaner and drier, requiring additional fat).
In my video below, you can see how quickly this meal comes together. I gather with some very picky eaters, very opinionated eaters actually, and so far, they’ve all enjoyed it -very much. No gripes, only love...so…whew… what a relief!
Even though it’s considered a quick meal in our books, it’s something that can definitely be made for family get-togethers, date nights, dinner parties, and special occasions. Some people like to devour it with fresh cracked black pepper, others with red chili flakes, but we love it with fresh rosemary, fresh basil, fresh chives, and lots of Pecorino Romano cheese!
And…just so you know…IF you have any leftovers, this Chorizo Carbonara tastes even better, the next day.
