Crispy Chicken Veggie Bowl
Super quick meals, made with fresh ingredients is what we very often want, but too many of us are easily tempted to drive towards a dang drive-thru!

For the past six months, my Hubby and I have cut out all seed and vegetable oils from our diet. Yes, I know it sounds impossible, but we threw out EVERYTHING. No more canola oil, no more soybean oil, no more peanut oil, no more corn oil, no more sunflower oil, or safflower. We are only sticking with unrefined organic coconut oil, organic avocado oil, beef tallow, lard, and organic butter. So…yep…this means -we rarely eat out any more. Are we able to eat out any more, at all? Yes, but only at places that don’t use those oils mentioned above.
How do we know if restaurants use these oils or not? Honestly, most restaurants use all of the oils we’ve cut out, but some places do not. I am now very polished in calling ahead to inquire about what they’re using and if they’re willing to accommodate us with the cooking fats we prefer. The biggest lesson in this: when I call restaurants to inquire about the oils used, they often admit that their dishes are usually pre-made (as in pre-made in their main commissary, or ordered from a food supplier/distributor), so no substitutions can be made for us. Folks, hearing this makes me even MORE GLAD that we are cooking a majority of our pure and fresh meals at home.
Now the answer to your question: Why are we doing this? Answer is, my body went through a painful time from 2019 to just recently in 2023. I had so much inflammation and it scared me. Doctors said it was arthritis and lymphedema. Not good. I’m now in my “life begins after 50” era, and I was seriously having a hard time walking, and moving my body. It was something I had never experienced before, and I was worried. I was someone who could rollerblade from the Santa Monica Pier to Venice Beach, or hike for miles with no problems, but during these (recent) past four years, I wasn’t able to do this. I needed pure and fresh. I needed to focus bringing into my body, exactly what my business was based on. Foods that are pure, fresh, and I need to do this, daily.
How am I doing now, in August 2023? I am doing much better. I’m able to hike 4 miles, and currently riding my bike 7-8 miles a few times a week. My body is letting me know that it’s getting strong and happy again. I will have to stay very vigilant about this. Unnecessary pain from the wrong food ingredients would be 100% my fault, so NO THANK YOU, I’ve suffered enough. No more.
