, I constantly have an abundance of sourdough starter at the end of each week. Having gone through the whole gamut of international baked goods in sourdough form, I saw the viral sourdough skillet pizza on Instagram and said, “Oh…Yeah, I haven’t made this yet, so, why not?!?” Honestly, I didn’t know what to expect since all of the recipe I’d seen, were made with gluten-loaded sourdough starter, but after a few tweaks, I was able to create a very lovely sourdough pizza crust, that so far, everyone has loved.

While I have written GF recipes, made with all-purpose, gluten-free flour, here on Substack, and have shared the only all-purpose, gluten-free flour brand I will use, I must confess, I RARELY eat anything that’s made from the AP/GF flour. Why not? Because I can’t break it down. My body just can’t do it and after eating starches, and or gums, I’m left with MAJOR pain in the lower part of my abdomen (small intestine), and it feels as though I’ve eaten loads of gluten. I’ve tried numerous times to eat it - even praying for a “mind over matter” effect to take place, but it just doesn’t happen. I’m hunched over for the next few days, plugged up, inflamed, and it’s no bueno for me.

My reason for sharing this with you, is to tell you in advance, that I don’t use AP/GF flour for my sourdough starters. True Sourdoughists will clobber you over and over in telling you that a real, authentic sourdough starter and sourdough bread (even the gluten-free kind), never contain starches or gums, so therefore, I don’t know how a starch and gum-loaded, gluten-free sourdough bread (or sourdough starter), will turn out, but you can always try it. I have been using a variety of GF flours, but primarily using quinoa and teff for my sourdough starters, and the results have been beautiful.
