Lemongrass Mussels with Pasta
A quick fix, weeknight meal that's gluten-free, dairy-free and delicious!
Pasta is one of those foods often missed by Celiacs, so I’m constantly trying to satisfy the craving for clients, newsletter subscribers, and for myself. Shrimp Alfredo, Shrimp Fettucine, Linguine and Clams, Shrimp Scampi…all of these are needed in our lives because the delightful experience of eating such dishes are forever engraved on our taste buds.
The flavors in this dish were inspired by the Lemongrass Garlic Shrimp pasta (from the gluten-free menu) at PF Changs in Los Angeles. The flavor combination is one of the best! Here I omitted the ginger, but you can, of course, add it back into the sauté segment.
If someone can’t have flour pasta, good ol’ zoodles can suffice, but most would prefer a good quality, gluten-free pasta. For this specific dish, I use Mama Instant Rice Vermicelli Noodles. I order them by the case from World Market. These noodles work beautifully for other dishes, such as Pad Thai, and Fideo.
