Persimmon Upside Down Cake
Recently, we were invited to a friends farm, in Central California, to pick persimmons & pomegranates. We picked 30 pounds of persimmons and 12 pounds of poms! I've been waiting to make this!
We picked these fruits with the anxious excitement of children! We were yelling out recipe possibilities as soon as the first persimmons popped into our baskets. “Persimmon cookies! Yeah!!! Persimmon bread! YES!!! Persimmon cake! For sure! Persimmon jam! Omg, I can’t wait!!! Persimmon butter? Yes, Let’s try it! lol… so, here we go with cake!
