Crafting Perfectly Cooked Leg of Lamb in Record Time
Some say a crock pot takes too many hours to get meat soft, others say the Insta Pot just doesn't do it. Others love or hate a pressure cooker. Which have you tried out?

Oooh, I was so excited to get a new pressure cooker recently, testing it out with a leg of lamb for Easter Sunday. We turned the shredded, flavor-loaded meat, into a few different meals, including these Street Tacos for lunch and a Mediterranean pasta dinner during the week. All in all, I have to say that using a pressure cooker has now become my favorite way of slow cooking meat in under 2 hours.

Here’s a little video on how I press out my corn tortillas… truly one of the simplest and most delicious things you can make!
It’s super simple! I cut two separate pieces of 8x8 pieces of parchment paper. I place one piece down on the tortilla press. I place a round ball of corn dough on top of the paper. I place the other piece of parchment on top. I then press the tortilla press down. Peel the tortilla off your parchment and quickly put it onto the surface of your hot skillet or griddle to cook. Viola! You have a fresh, scrumptious, homemade tortilla!
