Truly, there is nothing better than my warm, homemade, Sweet Potato Chocolate Chip cookies.
Being low-glycemic, egg-free and dairy-free optional, they're soft, moist, and crumbly...you're going to want to make them right away!
Prep Time: 15 minutes
Bake Time: 20 minutes
Serves: 9-12
INGREDIENTS
1 cup sweet potato puree (canned or fresh roasted, pumpkin can be used also)
1 cup coconut sugar (or your choice sugar)
1/2 cup melted butter
2 teaspoons vanilla
1 whole egg (or a flax egg, if needed)
2 cups gluten-free, all-purpose flour (I use this one) (*see note)
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/4 teaspoon turmeric powder (optional)
1/2 teaspoon salt
1 cup chocolate chips (I use dairy-free chocolate chips)
Note: For low-carb cookies, use alternative gluten-free flours. I often use 1 cup lupin flour, plus, one cup of chestnut flour.
