Thai Sausage and Veggie Patties
These make a very pleasing breakfast for the crisp and cool mornings that are starting to roll in.
Ingredients
3 cups vegetables, finely chopped (broccoli slaw works well)
1 small red onion, diced
4 whole eggs
½ pound of sausage, (chicken or pork) casings removed (*see note)
2 tablespoons gluten-free flour (preferably a soft flour like almond or white rice flour)
1 tablespoon fresh cilantro, chopped
1 tablespoon coconut aminos, or gf tamari sauce
1 tablespoon gluten-free fish sauce (optional)
You’ll need fat/oil to cook these in the skillet
Note: Stores such as Sprouts or Whole Foods often sell bulk pork sausage that works well.
Instructions
Use clean hands to combine ingredients in a medium bowl. Divide sausage into four thin patties.
Melt two teaspoons of your choice fat in a large skillet (I use beef tallow). Cook two patties at a time, for 3 minutes on each side. Repeat steps with remaining two patties.
