A Mediterranean Green Sauce That Will Definitely Impress

The 100° temps are back, so, like most Californian’s, we don’t want to spend too much time in the kitchen. My baking happens in the early morning hours, we utilize the outdoors to cook, we make big batches of this and that, and meal prepping to eat while errand-running, is a must. One simple, yet flavor-loaded recipe I make weekly, is my favorite Mediterranean Green Sauce, which is almost like a Chimichurri, but made with Castelvetrano olives, but not made with vinegar…and I keep out the red chili flakes, lol.
Last year, we were blessed to find that Costco was carrying large jars of Organic Castelvetrano Olives from Italy! Big jars, full of meaty green olives, for less than $7!
